110:3 One shouldn't knead or make the matzot except in a room with a roof, nor opposite an open window even if the sun isn't shining through, but if the windows are closed and they have glass it's allowed as long as the sun isn't shining through there. However, if the sun is shining through, the glass window doesn't help, rather one needs to spread a curtain where the sun is shining. One should be careful that the room is not heated or warm. אין לשין ואין עושין את המצות אלא בבית מקורה ולא כנגד חלון פתוח אפילו אין החמה זורחת שמה אבל אם החלונות נעולות ויש בהן זכוכית מותר אם אין החמה זורחת שמה אבל אם החמה זורחת שמה לא מהני חלון זכוכית אלא צריך לפרוס וילון במקום זריחת החמה וכן צריכין ליזהר שלא יהא הבית מהוסק וחם
110:4 One shouldn't knead an amount of dough larger than the quantity (required for) challah1 and it's preferably to have less, for the amount set by our sages, may their memory be for a blessing, for if the dough is greater than the amount for challah, it's impossible to work it in one go, so a part will be standing without being worked, and one may worry that it will rise.2 If the dough is soft, one shouldn't add flour to harden it.

אין לשין עיסה גדולה יותר משיעור חלה וטוב למעט כי שיערו רבותינו זכרונם לברכה שאם העיסה גדולה יותר משיעור חלה אי אפשר לעסוק בה בפעם אחת וחלק ממנה מונח בלא עסק ויש לחוש פן יתחמץ אם לש עיסה רכה לא יוסיף בה קמח להעבותה
110:5 One shouldn't stuff the dough into the measure, because then there is concern that it won't knead properly, and there will remain inside the matzah some flour, and when afterwards it will be in the cooking process, it will become leaven. Also one should be careful not to put the flour near to water, so that none of the flour powder will fall into the water. Similarly, the one measuring out the flour shouldn't go near the one kneading it, or (near) to the water. It's preferable to be careful not to put one's hand on the flour when not needed, because the hand warms (things) up slightly. לא ידחוק את הקמח תוך המדה כי יש לחוש שלא יהא נילוש יפה וישאר בתוך המצה משהו קמח וכשיהא אחר כך בתבשיל יתחמץ גם יזהרו שלא להניח את הקמח סמוך למים שלא יפול מאבק הקמח לתוך המים וכן המודד את הקמח לא יתקרב אל העיסה או אל המים וטוב ליזהר שלא להניח את היד אל הקמח שלא לצורך כי היד מחממת קצת
